There are many types of boning knives that are designed for certain meats and purposes. As far as our Traditional® 6” Flexible Boning Knife goes, it’s extremely adept in getting close to the bone and getting into hard-to-reach spots. This makes it a great knife for deboning poultry, pork, smaller cuts of beef, and skinning fish. If you prefer a different type of boning knife, we also carry stiff, wide, narrow, and curved variations. (#2060)
