Bacon Creamed Corn

INGREDIENTS
- 8 slices of bacon
- 2 TBSP butter
- 1/2 white onion - small diced
- 4 ears of corn cut off the cob
- 1/2 bag frozen corn
- 2 cups heavy cream
- 1 cup milk
- 1 1/2 TBSP cornstarch
- salt to taste
DIRECTIONS
- Cut bacon into 1/2" pieces with shears
- Place cut bacon into a large pot on medium heat and cook until crispy - stir repeatedly. Remove bacon from pot and drain on paper towels.
- Remove half the bacon fat and add butter to the pot, once melted add in the onion and cook until softened.
- Add raw and frozen corn to the pot until heated through and raw corn is slightly sauteed.
- Add the heavy cream and bring to a simmer.
- Whisk in cornstarch and milk and slowly pour into pot while stirring constantly.
- Cook for a few minutes until thickened.
- Fold in the cooked bacon and season with salt to taste
