  • What should I look for in an edge?

Selecting the right knife edge is an important element when prepping your meals. If you have ever cut bread without a scalloped edge and crushed it flat, you know why this is an important step in knife selection.

    1. The straight edge is the most commonly used edge. It is mainly used on chef’s knives, boning knives, fillet knives, slicers, and paring knives. A straight edge allows the user to cut, chop, mince and dice. Straight edges are designed to cut without tearing or shredding.
    2. The scalloped edge is made of points and valleys. The points are utilized to penetrate the product, while the valley is used to slice. A scalloped edge is efficient on anything with a crust, peel or rind.
    3. The Duo or Granton edge employs a series of alternating small hollows on both sides of the blade. This allows the introduction of air, juices and fats helping to lubricate the blade for smooth effortless slicing.
    4. The Tiger edge takes the scalloped edge to the next level! It creates a very aggressive cutting edge commonly used on whole fish and partially frozen foods.

  • What is the best sharpener for my needs?

Each sharpening solution is designed to give you the edge you need to excel in your kitchen.

    1. Ceramic Rods offer varying coarseness for dull or worn edges, partially dull edge or quick touch ups. They don’t require any oil or water when sharpening.
    2. Manual Sharpeners typically feature a combination of different stones with varying grit. Manual knife sharpeners permit long strokes for optimal sharpening, but require oil for lubricating.
    3. Electric Sharpeners are precision sharpening systems that help maintain consistent blade angles. Models differ and utilize belts or wheels with varying grits.
    4. Hand-Held Sharpeners are ideal for those who require quick edge touch-ups. Dexter’s hand-held knife sharpeners put a sharp edge on your knives in just a few simple strokes.
    5. Robotic Sharpeners are intended for high-volume professional establishments such as Processing Plants. Dexter’s ROSS-1™ sharpens up to 3000 knives a day to Anago scores of 8.5 to 8.7.
